RecipesChocolate Cake -Christine Mullowney, '07
Here is the recipe for the chocolate cake with chocolate frosting:
Cake:
Cream together:
1/2 C butter
2 C sugar
5 heaping Tablespoons cocoa
Add (alternate the wet/dry ingredients):
2C flour
2 tsp baking soda
1/2 tsp salt
2 eggs (beaten with whisk first)
1 tsp vanilla
2/3 C sour milk*
Mix well
Add 1 C boiling water and mix again
*Make sour milk by adding 1 Tbsp lemon juice OR plain vinegar to 1 C milk and
let stand 5 minutes.
Bake at 350 for 35-40 minutes (my mom does it even less time).
Frosting:
Mix together:
2 3/4 C confectioner's sugar
1/2 tsp salt
1 tsp vanilla
6 Tbsp light cream or milk
Separately, in a double boiler melt together:
3 oz. unsweetened chocolate (Baker's Brand)
2 Tbsp butter
Add previous ingredients to the melted chocolate and heat for 10 minutes.
Afterwards, add 1 tsp vanilla. Add another Tbsp milk if the frosting is too
thick OR put pan in cold water and stir to help it thicken (but be careful not
to make fudge!)
