Blender Chocolate-Mint Mousse - Jason Chao, MD
Ingredients:
1/4 cup cold milk
1 envelope unflavored gelatin
3/4 cup milk, heated to boil
6 Tbsp. crème de menthe (or rum or cognac or liqueur)
1 egg
1/4 cup sugar
1/8 tsp. salt
1 6 oz. package semi-sweet chocolate
1 cup heavy cream
2 ice cubes
Method
1. Put cold milk and gelatin in blender. Cover and blend at low speed to soften gelatin.
2. Add boiling milk, blend until gelatin dissolves.
3. Add crème de menthe, egg, sugar, salt. Turn off or low and add chocolate. Blend until smooth.
4. Add cream and ice. Blend until ice dissolved.
5. Pour into glasses or 1 1/2 qt. soufflé dish.
6. Top with whipped cream.
